Recipe: Banana Muffins

 

Hello Bees!! Today i am going to share a banana muffin cake recipe with step by step photos. In our home this muffin recipe (or you can make it as a banana bread) is everyone’s hot favorite. It is so easy to make and delicious that you want to make it again and again. Just try once 🙂 . Only thing you need to remember is bananas should be ripe, soft and sweet. Take ripe or even over ripe banana to prepare this recipe. If you have over ripen banana then you can mash them, add 1 tsp lemon juice for each banana in a freezer safe bag  and freeze them if you want to make the recipe later. It will keep about six months in the freezer. You can use whole wheat flour or oats instead of all purpose flour to make it more healthy.

Prepare the muffin and store them in fridge (you can keep about 2-3 days) or in freezer (you can keep them about six months). Keep in mind that you should not have power cut in your region 😛 .

It is a great way to incorporate healthy ingredients in one recipe. I generally make them in batches, put them in freezer and use them as I want. I always put it in my daughter’s snacks box or we eat it as sun(-no-breakfast-)day’s snacks with our special tea. You will love the every bite of it. let’s get started.

You can make 15-20 muffins.

Ingredients: (1 measuring cup= 240 ml approx)

Dry Ingredients:

  • 1 cup all purpose flour
  • ¾ or 1 cup instant oats
  • 1/2 cup (150 grams) granulated sugar (white/brown)
  • 1 tsp baking powder
  • ¼ tsp baking soda
  • 1 tsp ground cinnamon (optional, but enhance the flavor)
  • 1/3 cup nuts in your choice (walnut/pecans/almonds or mix) or can add more if yo want
  • ¼ tsp salt

Wet Ingredients:

  • 3-5 ripe banana (depending upon size, approx 450 grams)
  • 2 large eggs
  • ½ cup butter (115 grams approx) melted room temperature
  • 1 tsp vanilla extract

How to make:

  1. Place your nuts in a sheet and roast them for 5-10 minutes in grill mode or you can dry roast then on gas stove. Do not let them burn.
  2. Preheat the oven 180 degrees Celsius/ 350 degrees F in preheat mode or for 5-10 minutes depending upon the watt power of your microwave.
  3. Grease your muffin pan with oil or butter. You can line them with cupcake liner too.
  4. In a large bowl, sieve flour, baking powder, salt, baking soda, cinnamon, and nuts. Keep it aside.
  5. Take another large bowl, mash banana (do not over do it), then add butter, eggs (lightly beaten with fork), sugar, vanilla extract. With the help of a wooden spoon or spatula lightly mix the batter.
  6. Add your dry ingredients into your wet ingredients and mix it gently. Do not over mix the batter or it will be a tough rubbery one.
  7. Take an ice cream scoop or a deep spatula and pour the batter 1/3 of the muffin pan.
  8. Place low rack inside the oven and put your muffin pan above it.
  9. Bake about 20-25 mints until a toothpick or a knife comes out clean.
  10. Let them cool for 5-10 minutes (you can use your high rack attachment to cool it faster) and serve it with pre cut banana or any fruits.

Step by step banana muffins recipe:

  1. Preheat the oven 180 degrees Celsius/ 350 degrees F in preheat mode or for 10-15 minutes. Grease your muffin pan with oil or butter. You can line them with cupcake liner too.

2. Put all your ingredients in one place.

3. Place your nuts in a sheet and roast them for 5-10 minutes in grill mode or you can dry roast then on gas stove. Do not let them burn. Put them in a zip-lock bag and gently beat them with the help of a rolling pin.

4. In a large bowl, sieve flour, sugar, baking powder, salt, baking soda, cinnamon, and nuts.

5. Take another large bowl, mash banana (do not over do it), then add butter, eggs (lightly beaten with fork), vanilla extract. With the help of a wooden spoon or spatula lightly mix the batter.

6. Add your dry ingredients into your wet ingredients and mix it gently.

You can add approx. 1/4 cup milk to adjust the consistency

7. Take an ice cream scoop or a deep spatula and pour the batter ¾ of the muffin pan.

8. Place low rack inside the oven and put your muffin pan above it.

9. Bake about 20-25 minutes until a toothpick or a knife comes out clean.

10. Let them cool for 5-10 minutes (you can use your high rack attachment to cool it faster) and serve it with pre-cut banana or any fruits.
